Heston had long dreamed of creating a palate cleanser for the Tasting Menu – something delicate that would invigorate and refresh the mouth, ready for the dishes to come. Gradually, he isolated a set of ingredients that fitted the bill: green tea to cleanse. Lime juice and malic acid to make the mouth water. Vodka as a neutral, liquid base to help spread these flavours. To keep it as light and unobtrusive as possible, he prepared the mixture in a siphon and served it as a foam, in a glass with a spoon.
The dish worked but it was fragile. There was always the risk that it would split before it was finished. He found this dissatisfying but it was a while before he realised a super-cooled gas offered a solution to the problem, and The Fat Duck became the first restaurant to feature liquid nitrogen on its menu.
Liquid nitrogen is -196°C. Up until then it was mainly used in medicine (cryotherapy, cryopreservation) and in food storage. Scientist friends of his, such as Peter Barham and Tony Blake, had put him on to the stuff, and he had been exploring its potential in all sorts of ways, from frozen bananas to a toffee apple that was hot on the inside. During one such experimental session it suddenly struck him that liquid nitrogen’s icy freshness perfectly suited the character of his palate cleanser. Instead of putting the foam into a glass, he could squirt it into a container of liquid gas where it would freeze into a little meringue to be spooned into the mouth and dissolve instantly, leaving only an impression of refreshment.
