DÜRTÜK aims to support local producers from Istanbul and its surroundings, which are under the threat of disappearing. DÜRTÜK aims to provide access to affordable quality food, to support small farmers and gardeners, and to actively support the struggle for ecology with an alternative food economy. Unlike other formations, DÜRTÜK focuses on supporting food production in the city. Food cooperative BÜKOOP, established on the Boğaziçi University campus and run by volunteer students, aims to deliver healthy and fair food to all income groups, from producer to consumer without intermediaries. Within the cooperative, field visits and talks with producers are carried out in order to develop relationships based on trust between the consumer and the producer. Woman to Woman Refugee Kitchen was founded by the Syrian neighbouring women living in Okmeydanı, when they started making jam and pickles at home to support their family budgets. The Woman to Woman Refugee Kitchen functions as a solidarity, socialisation, and learning space for productive women. Today, it continues to exist as a professional kitchen with the support of volunteers. In Tarlabaşı Immigrant Solidarity Kitchen, whose activities were ceased this year, everyone was accepted as a cook, and all meals were shared. A solidarity space had been created, where the concept of cuisine was not only about food, but about sharing problems and searching for solutions together. Workshops and language classes were also organised and led by those who wished to convey their knowledge and experience. Komşu Kafe Collective is a participatory cafe initiative without a customer-owner relationship or a chef; it is a common space open to anyone in the city. Those who come here pay as much as they want for what they eat. They can even enter the kitchen and prepare food if they wish to do so. Komşu Kafe, which was closed this year, has hosted improvisatory performances, film screenings, and various gatherings where dishes from different cultures were tried for many years. Food communities and consumer cooperatives exist in almost every city or neighbourhood in Turkey, and defend everyone’s right to access healthy, natural, and quality food. They support a social benefit-based organisation in production-consumption relations by directly connecting consumers and local producers. These communities offer an alternative way to existing food supply systems. They strengthen citizens’ ties with sustainable eating habits. Food collectives and solidarity kitchens, on the other hand, aim to combat economic and social inequality arising from capitalism and racism, through gathering, sharing and solidarity. They create spaces of solidarity in the city by bringing together people from different nationalities, genders and ages through food. Collectives and culinary initiatives carried out on a voluntary basis in Istanbul are rapidly disappearing due to operational and economic struggles. Tarlabaşı Immigrant Solidarity Kitchen and Neighbourhood Café Collective are among the kitchens that were closed in the past two years. Türkiye ve Hollanda'dan beşer genç tasarımcıyı bir araya getiren "Geleceği Tasarlamak" adlı sanal misafir tasarımcı programı, 31 Ağustos – 7 Eylül arasında gerçekleşti. Hafta boyunca bizimle birlikte olan illüstratör Hatiye Garip, çizimleriyle tüm süreci hikâyeleştirdi. Keşkek is a dish in which meat and wheat are beaten and then cooked together. In many parts of Turkey on special occasions, keşkek is cooked in large pots and on open fires in the street with work-sharing between women and men. As a participatory and sharing-based tradition, it has also been included in the UNESCO list of Intangible Cultural Heritage. Fasting in the month of Ramadan is considered sacred by Muslims. The fast starts with ‘suhur’, which is usually eaten with family members, and ends with more crowded ‘iftar’ meals. Families, friends, neighbours gather around the same table at homes or long tables set along the street at iftar. During the Gezi Park protests in 2013, this collective dinner tradition was performed in the busiest place of Istanbul, Istiklal Street and became a symbol of unity. Especially in Anatolia, it is a common ritual to roast halva after the deceased, and distribute it to both those who come to the funeral home and the needy as charity on behalf of the deceased. Halva is collectively cooked by women while praying. Halva was also an important part of social life in the Ottoman Empire. The ‘halva conversations’ were gatherings which were built around the offering of halva, and held between men from all parts of society, especially in winter. These meetings were hosted in turns. In this respect, they are similar to the ‘gold days’, which are popular meetings among women today. Gold days are gatherings where women come together periodically to socialise and support one another. Everyone takes turns in becoming a host in these gatherings filled with food offerings and chat. Each guest brings one gold coin to be given to the host. In this respect, an informal flow of money occurs among women. During certain rituals and ceremonies, which are the building blocks of culture, some food and drinks played an important role, and these rituals have been shaped around certain food and drinks. These therapeutic and social practices, where solidarity, sharing and participation are at the forefront, manifest themselves in different ways in many events such as religious holidays, funerals, soldier send-offs, memorial services, asking for a bride’s hand, ‘gold days’ and weddings. For example, during family visits on the occasion of Ramadan, dessert is always offered to guests. A gold day is a monthly get together between a group of friends to exchange gold, for which sweet and salty treats that can easily be consumed are prepared. The tradition of asking for a girl’s hand in marriage with the presence of the whole family is shaped around Turkish coffee. In funeral homes, halva is roasted all together as a therapeutic practice.
