Here, @chefthomaskeller describes the book: "I started working on this book two years ago, envisioning a cookbook not just about recipes but about the evolution of fine dining as seen through the unique collaboration between the kitchens of @_tfl_ and @perseny.

Now, in the summer of 2020, the value of restaurants as a social force has never been so clear. The nourishment provided by a meal does not begin or end with the food served on a plate. It starts with feeding your family or gathering with friends around a table and extends outward in a web of community and connectivity. We are joined in a symbiotic relationship that also sustains the farmers who grow our food, the fisherman who harvest our oysters, the foragers who gather our mushrooms, and the winemakers who supply our cellars. Those who choose to dine at our restaurants also support the people who bring them to life and maintain them, from the cleaners who wash our linens and the artisans who make our porcelain, to the florists who fill our rooms with beauty and the myriad of skilled individuals who make our daily service possible.

Our Beverage Director @michelcouvreux has been cooking up creations inspired by his French heritage, and pairs them as only he can. "Stephane Moreau produces some of the most exciting Chablis right now. This premier cru offers flavors of wet stones, chalk and plenty of minerality character. On the nose, there are some notes of white flowers and citrus peel. This wine has a very bright acidity and is medium bodied. A perfect wine to go with seafood dishes. Happy weekend."

Island Creek Oysters has been our purveyor since the opening of Per Se and we have appreciated our long friendship with Skip Bennett and his team. We use these oysters for our signature Oysters and Pearls dish. While at home, I was inspired by what my son likes to eat so I have created additional preparations both raw and cooked.
