Light, fluffy, aromatic, and just the perfect amount of sweetness, the Japanese soufflé cheesecake is one of my absolute favorite desserts. It has been on my to-bake list for years and years. I don’t know why I never made it until now! So here is my first (of probably many more) Japanese soufflé cheesecake, served on a vintage pressed glass cake stand and presented with a hand-lettered card. What’s the special occasion? It’s finally baking weather!
Recipe is from the awesome Nami-san @justonecookbook. It takes a bit of prep work, and measuring everything precisely with a kitchen scale is key. I can’t wait for it to cool so I can have a slice or two. Nope, I’m not sharing. 😂

Squeezed in a bit built-up capitals practice this morning while I waited for my weekly sourdough to bake in the oven.
This is my 19th loaf of bread since I started this journey back in May. My sourdough starter is now four months old! 🤎 it’s nothing like the incredible 50+ year old starters some of you have, but I’m still proud of it because I started it all by myself.
I considered myself a decent baker, but wow, sourdough baking is not an exact science at all. So many times it would fail even though I followed the exact directions. I wanted to give up so many times. But I guess the stubborn side of me just kept trying. Finally, after loaf no. 15 I realized: okay, I am slowly getting better at this.
I almost forgot that as of Sept. 17, I am starting my 10th year of calligraphy. I often ask myself why I keep at it even though I make progress at such a glacial pace. 🤣 I guess it’s like baking - I just want to keep trying to see if I can get better.
