Minced beef+veggies +potato sauce -for dinner :
Ingredients
1kg minced beef
1 cup potatoes diced
1 piece carrot cubed
1/2 cup soy sauce
1/2 piece lemon
1 piece onion chopped
3 cloves garlic minced
1 teaspoon sugar
3/4 cup tomato sauce
1 cup water
2 tablespoons cooking oil
2 to 3 pieces dried bay leaves
Salt and pepper to tast

Instructions
Combine beef ,soysauce, and lemon in a bowl. Marinate for at least 1 hour.
Heat oil in a pan
Saute garlic and onion.
Add the marinated beef ,Cook for 5 to 7 minutes.
Pour in tomato sauce and water and then add the bay leaves.Let boil and simmer for 30 minutes to an hour depending on the toughness of the beef. Note: Add water as necessary.
Cook for 5 minutes.
Put-in potatoes, carrots, sugar,salt, and pepper. Stir and cook for 8 to 12 minutes. :

This recipe requires the meat to be marinated in soy sauce and lemon first before cooking. Combine the beef,soy sauce and lemon in a bowl. Mix well and let it stay for at least 1 hour. It will be better to store the bowl inside the refrigerator while you marinate to avoid contamination. Make sure to cover the bowl before doing this.

His & Hers stuffed sweet potato combo! I feel like I’m eating the same thing, but totally different ways. Not complaining 😋
Roast sweet potatoes in a 400° oven. I always forget how long this takes🤷🏻♀️45-1hr. Even when I prick em with the knife 🔪
In a hot cast iron I got some coconut oil going, threw in some frozen mixed Bell peppers/onions, and fire roasted corn. You wanna get the moisture out of these so plan to cook them for a while, it’ll happen.
Babysit the veg while you slice the amazing sausages nto coins. I added apple (my personal fave),
Put it in the 400° oven that the 🍠 were in, just on another rack. Watch those for 10-12 mins depending how you like the crispness. They are fully cooked, I just love doing this for some crispy sears on the sides. Flip them so the other side can get seared halfway through.
This is when I decided some fire roasted tomatoes would go good with my peppers/onions/corn. So I added those and started getting some spices together.
⭐️Paprika
⭐️Chili Powder
⭐️Cumin
⭐️ black peppercorns
⭐️Cinnamon
I really just eyeballed the spices and used a very small amount of everything. Sorry! Taste your food! You’ll know what you like!
When sweet potatoes were about done, I started melting some pasture raised butter, with Local Honey (man, this stuff is GOOD!!!)!!
Melted these two in a sauce pan just till incorporated, and brushed on the 🍠
Threw under the broiler to get a light caramelization & you’re set!
Assembled mine by starting with arugula, tomatoes, and feta in brine, sweet potato, veg filling, sausages, and a jalapeño! Which was really just the jalapeño sauce with oil I made the night before, adding sour cream to it!
Took longer to type this out then it did to make it I swear! 😘 tell me if you make this!

Ingredients

2 tablespoons soy sauce

1/3 cup beef stock
1/2 cup fresh cilantro, coarsely chopped
2 cups French fries
Fluffy white rice, as a side dish :
Steps
1...Season the beef with garlic, salt and pepper.
2 ...Put a wok or a pan over very high heat. Stir in oil and cook the meat, a few slices at a time (so they do not steam and the meat browns). Cook each batch 2 minutes.
3...Stir in the onion, tomato, chili pepper, and stir for about 2 to 3 minutes. The tomatoes and onions should be crunchy, not mushy. Stir in soy sauce and vinegar on sides of wok or pan. Mix everything. Add beef broth and cook 1-1/2 minutes. Taste for seasoning.

How many pics of coconut shrimp is too many?! I say NONE when they look as good as these !! 🍤 you guys know I like you to see ALL THE PICTURES! I went with somewhat of a hybrid when it came to the breading. I used coconut flour which I seasoned with salt, pep, garlic, & onion powder. Then I pulsed the coconut flakes with bread crumbs in my processor, whisked a couple eggs in another bowl. That’s how quick your breading station gets setup. I did flour, egg, coconut flake/breadcrumb mixture. Let sit on rack before frying. The breading stuck to the shrimp so beautifully! We paired it with some pineapple, mixed greens, and Caesar dressing. It was a beautifully light and tasty lunch I highly suggest you try this

Do you ever have leftover rice in the fridge? A great way to use it up is to make fried rice! Fried rice works best with chilled leftover rice actually. Fresh rice can fry up a bit mushy. But leftover rice that had a chance to dry out a bit? Perfect for frying.

INGREDIENTS Large raw shrimp, shelled and deveined
1/2 teaspoon salt
freshly ground black pepper
1/2 teaspoon cornstarch
3 tablespoons high smoke point oil such as canola oil or rice bran oil
3 eggs, beaten
2 stalks green onion, minced
4 cups leftover rice, grains separated well
3/4 cup frozen peas and carrots
1 tablespoon soy sauce (use gluten-free soy sauce if you are making a gluten-free version), plus more to taste
1 teaspoon dark toasted sesame oil :

METHOD
1 Toss shrimp with salt, pepper, cornstarch: In a medium bowl, sprinkle the shrimp with salt, pepper, and cornstarch, and toss to coat. Set aside to sit for ten minutes at room temperature.
2 Heat pan on high heat: Heat a large sauté pan or wok (a seasoned cast iron pan or hard anodized aluminum works well, they're relatively stick free and can take the heat) on high heat.
When the pan is very hot (a drop of water instantly sizzles when it hits the pan), swirl in one tablespoon of the cooking oil to coat the pan.
3 Sear shrimp on both sides: Add the shrimp to the hot pan, spreading them out quickly in a single layer. Let them fry in the pan without moving them, for 30 seconds.
4.Cook beaten eggs, slightly runny: Return the pan to the burner and lower the heat to medium. Add a little more oil if the pan needs it. Add the beaten eggs and stir them quickly to scramble them while they cook.
5.Sauté green onions, add rice: Clean out the pan or wok with paper towels and return it to the burner. Heat the pan on high and when it is hot, swirl in the remaining tablespoon or two of oil. When the oil is shimmering hot (almost smoking), add the green onions and sauté for 15 seconds.Then add the leftover cooked rice to the pan and stir fry
6.Add soy sauce, carrots, peas, shrimp, eggs, sesame oil: Sprinkle soy sauce on the rice and stir to combine.

TASTY Chicken Salad for Lunch with some homemade Chipotle Ranch!
Used my go to favorite mccormickspice Chipotle marinade for the chicken from @tchaiwellbeing (made with water only- I omit the oil). Lettuce ,tomatoes, onion, cilantro, avocado and 2 Tbsp dressing
Chipotle Ranch Dressing
1/2 cup light mayonnaise
1/2 cup reduced fat sour cream
2 tbsp chipotle peppers in adobo sauce
1/4 cup fresh cilantro
1 Lime, juiced
1 Tsp honey
1 cup low fat buttermilk
2 tbsp Ranch dip seasoning mix
Place all of the ingredients in a blender or food processor and blend until smooth. Makes approximately 20 servings.
